Sitting in a Cafeteria at lunch time, I always had sandwich in my hand. To be honest, what else do they sell at cafeteria’s by the way?
Sometimes BLT, or those vegan ones with mushroom when I’m in the mood for a healthy choice, or perhaps the one’s with roasted beef in it(yum!). Although I love all of these fancy sandwiches, there is something warm and soothing about a homemade egg cucumber sandwich.
Maybe it’s because these are one of my childhood memories. Maybe it’s the softness that just melts in your mouth. That sweetness of the eggs underneath the crunchy texture of the cucumber. But either way I never saw someone regret trying this out!
Egg Cucumber Sandwich

Ingredients
- 6 pieces Sandwich bread of your choice
- 1 Tbs Butter for the bread
- 4 Eggs
- 1 English cucumber
- 1 tsp salt for the cucumber
- 3 Tbs Mayonnaise
- 1/2 tsp Dijon mustard
- salt & pepper for seasoning
Instructions
- 1. butter one side of all the breads.
- 2. julienne cut the cucumber and rub in salt. set aside.
- 2. hard boil the eggs. It takes approximately 7-9 minutes.
- 3. separate the eggs in egg whites and egg yolks and place them in a separate bowl.
- 4. Put mayonnaise and dijon mustard, mayonnaise in the egg yolk bow. Use a fork, blender etc. to make a smooth paste. season with salt and pepper.
- 5. cut the egg whites in chunks.
- 5. squeeze the juice out of the cucumber. using a cheese cloth makes it easier to work with.
- 6. add the egg whites and the cucumber into the egg yolk bowl. mix well.
- 7. paste the egg mixture on the buttered bread.
- It's done!
Notes
- Put a little bit of more mayonnaise if the paste is too dry. try not to overkill it by adding too much mayonnaise - it might become soggy and watery.
